Barber Lee Spirits is a California craft distillery dedicated to reviving heirloom corn varieties that defined American whiskey before the rise of commodity yellow dent corn. Their Heirloom Corn Bourbon is made from non-GMO Bloody Butcher and Hopi Blue corn grown in California's Central Valley — the Bloody Butcher delivering spicy notes of buckwheat, chili peppers, and sweet cherry, while the Hopi Blue adds rich, earthy flavors. Malted barley, rye, and non-GMO yellow corn round out the blend, and the whiskey is aged in new, heavy char American oak barrels. More difficult to make than conventional bourbon, but the result is a more interesting, dry bourbon with a wonderfully full texture and flavors of fruits and spices.
