The Toasted Barrel Process

While traditional bourbon barrels are charred, the second barrel used for Elijah Craig Toasted Barrel is toasted instead. This gentler heat treatment caramelizes the wood sugars differently, extracting sweeter, more nuanced flavors like vanilla, caramel, and baking spices without the aggressive char notes.
